Freshly bottled the wine has a really pure, crystalline bouquet, with tons of Jonagold apple, cantaloupe, and wet stone giving way to a touch of asian pear as the wine gets some air. Very direct and linear on the palate, lots of fresh apple and honeydew, along with ample, cleansing acidity. It's going to be a real challenge keeping your hands off this one as the weather warms up, but the wine's combination of acid and minerality suggests to us that this will evolve really positively over the next three to five years, maybe picking up a touch of the spiciness with some time in bottle. In the meantime, it really doesn't require any accompaniment beyond some fine spring weather and a view, though a helping of fish tacos certainly wouldn't hurt.
