Our 2021 Late Harvest Petit Manseng comes from allowing the grapes to continue to hang on the vine later in the harvest season to allow the sugars to further concentrate to a higher percentage. This late harvest picking allows us to create a wine that has a proper alcohol content as well as residual sugar content giving it the iconic sweetness, naturally. Fermented and aged in barrel for 18 months, the fermentation was allowed to go on until stalling out from the alcohol content, leaving a 1.2% residual sugar content behind from sugar in the grapes that did not ferment to alcohol. The resulting wine is lively, fruit forward with beautiful notes of ripe apricot, a sweetness that is kept in balance, it is important to note this is not a syrupy sweet dessert wine, this is just enough sweetness to respect the style without going overboard.
